2 cups plain Greek yogurt

1 large apple, peeled and diced (a sweet variety such as Fuji or Honeycrisp is preferred)

1 cup Medjool dates, pitted and finely chopped

1/2 cup walnuts, coarsely chopped

1/2 cup rolled oats

1/4 cup honey or maple syrup (use maple syrup for a vegan option)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon

A pinch of sea salt

Optional toppings: additional chopped walnuts, shredded coconut, or dark chocolate chips

Instructions
 

Prepare the Pan: Begin by lining an 8x8 inch baking dish (or an equally-sized pan) with parchment paper. Make sure to leave some paper hanging over the edges; this will help you lift the bars out later with ease.

    Mix the Base: In a large mixing bowl, combine the plain Greek yogurt, honey (or maple syrup), vanilla extract, ground cinnamon, and a pinch of sea salt. Use a whisk or spatula to blend these ingredients together until the mixture is smooth and well incorporated.

      Incorporate the Ingredients: Carefully fold in the diced apple, chopped Medjool dates, walnuts, and rolled oats into the yogurt base. Mix gently to ensure everything is evenly distributed without overly breaking down the apple or dates.
