1 cup Biscoff cookie crumbs

2 cups plain Greek yogurt (or your preferred yogurt)

1/4 cup honey or maple syrup (adjust based on desired sweetness)

1 teaspoon vanilla extract

1/2 cup mini chocolate chips (optional)

1/4 teaspoon sea salt

Extra Biscoff cookies for garnish (optional)

Instructions
 

In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup), vanilla extract, and sea salt. Mix thoroughly with a spoon or spatula until the mixture is smooth and well blended.

    Carefully fold the Biscoff cookie crumbs into the yogurt mixture using a rubber spatula, ensuring they are evenly distributed. If you're adding mini chocolate chips, incorporate them at this stage for an extra sweet surprise.

      Prepare a baking sheet by lining it with parchment paper to prevent sticking. Utilizing a small cookie scoop or your hands, form bite-sized balls (approximately 1 inch in diameter) from the yogurt mixture and place them on the lined baking sheet.

        After you have placed all the mixture onto the baking sheet, gently press each ball down just a bit to create a flatter shape, if preferred.

          For a decorative finish and extra flavor, crumble additional Biscoff cookies and sprinkle them on top of each yogurt bite.

            Transfer the baking sheet to the freezer and freeze the cookie bites for a minimum of 4 hours or until they are completely solid.
