Frozen Yogurt Coconut Pecan Pops

Ingredients
  

2 cups plain yogurt (either Greek or regular will work)

1 cup canned coconut milk (opt for full fat for added creaminess)

1/4 cup honey or maple syrup (adjust according to your desired level of sweetness)

1 teaspoon vanilla extract

1/2 cup unsweetened shredded coconut

1/2 cup chopped pecans (toast them for an enhanced flavor, if you prefer)

A pinch of sea salt

Optional: Melted chocolate for drizzling on top

Prepare the Mixture: In a large mixing bowl, add the plain yogurt, coconut milk, honey or maple syrup, vanilla extract, and a pinch of sea salt. Use a whisk to blend the ingredients together until the mixture is completely smooth and homogenous.

    Incorporate Coconut and Pecans: Carefully incorporate the unsweetened shredded coconut and chopped pecans into the yogurt mixture. Use a spatula to gently fold them in until they are evenly distributed without overmixing.

      Fill the Molds: Pour the mixture into popsicle molds, filling each one about three-quarters of the way full. This ensures there is enough room for the pops to expand as they freeze. If you do not have popsicle molds, small paper cups can be an excellent substitute, using sticks for handles.

        Insert the Sticks: For molds with built-in sticks, simply insert them now. If using paper cups, place a wooden stick firmly in the center of each cup to act as the handle for your pops.

          Freeze: Carefully place the filled molds or cups in the freezer. Allow them to freeze for a minimum of 4 to 6 hours, or until they are completely solid.

            Serve: When the pops are fully frozen, remove them from the molds. If you're using silicone molds, you can run warm water over the outside for a few seconds to help release them. For paper cups, gently peel the cup away from the frozen pops.

              Optional Chocolate Drizzle: For an extra touch of indulgence, melt some dark or milk chocolate, then drizzle it over the tops of the pops using a piping bag or a fork for a decorative finish before serving.
