1 cup rolled oats

1/2 cup all-purpose flour

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 cup coconut oil, melted

1/4 cup packed brown sugar

1/4 cup granulated sugar

1/4 cup plain or vanilla Greek yogurt

1 large egg

1 teaspoon vanilla extract

1/2 cup chocolate chips or dried fruit (optional)

1 cup Greek yogurt (for freezing)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent your cookies from sticking.

    Mix Dry Ingredients: In a medium bowl, combine the rolled oats, all-purpose flour, baking powder, baking soda, salt, and ground cinnamon. Whisk until evenly combined, then set aside.

      Cream Wet Ingredients: In a large mixing bowl, whisk together the melted coconut oil, packed brown sugar, and granulated sugar until the mixture is smooth and fully blended. Add in the Greek yogurt, egg, and vanilla extract, mixing until the mixture is creamy and homogenous.

        Combine Mixtures: Gradually add the dry ingredients into the wet mixture, stirring gently until everything is just combined. If desired, fold in the chocolate chips or dried fruit at this stage to add extra flavor and texture.

          Form Cookie Rounds: Using a tablespoon or a cookie scoop, drop mounds of dough onto the prepared baking sheet, making sure to space them about 2 inches apart. Gently flatten each round with the back of a spoon to shape them into cookies.

                    Freeze Sandwiches: Return the assembled cookie rounds to the freezer for at least 2 hours, or until you are ready to serve them.
