2 cups plain Greek yogurt

1 cup crushed pineapple (fresh or canned, well-drained)

1/2 cup coconut milk (canned for creaminess)

1/2 cup unsweetened shredded coconut

1 teaspoon pure vanilla extract

A pinch of salt

Blend the Base: In a blender, add the Greek yogurt, crushed pineapple, coconut milk, honey or maple syrup, vanilla extract, and a pinch of salt. Blend on high speed until the mixture is smooth and creamy, ensuring all ingredients are thoroughly incorporated.

    Incorporate the Coconut: Gently fold in the shredded unsweetened coconut using a spatula, making sure it is distributed evenly throughout the yogurt mixture.

      Prepare to Freeze: Using a muffin tin or silicone cupcake molds, pour the yogurt mixture into each cup evenly, filling them about three-quarters full to allow for expansion during freezing.

        Freeze Solid: Transfer the filled cups to the freezer and let them freeze for approximately 4 to 6 hours, or until they are completely solid and firm to the touch.
