1 cup rolled oats

1/4 cup coconut oil, melted

1/4 cup honey (or maple syrup for a vegan alternative)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

For the Raspberry Yogurt Layer:

2 cups plain Greek yogurt (or a dairy-free yogurt of your choice)

1 cup fresh or frozen raspberries

1/4 cup honey (or maple syrup)

1 teaspoon vanilla extract

For the Topping:

1/2 cup granola (store-bought or homemade)

Fresh raspberries for garnish (optional)

Instructions
 

Prep the Base:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, thoroughly combine the rolled oats, almond flour, melted coconut oil, honey (or maple syrup), vanilla extract, and salt until the mixture is cohesive.

        - Line an 8x8 inch (20x20 cm) baking dish with parchment paper for easy removal. Press the oat mixture firmly and evenly into the bottom of the dish to form a compact base.

          Bake the Base:

            - Place the baking dish in the preheated oven and bake for approximately 10-12 minutes, or until the edges are lightly golden brown. After baking, allow the base to cool completely in the pan.

              Make the Raspberry Yogurt Layer:

                - In a blender or food processor, combine the Greek yogurt, raspberries, honey (or maple syrup), and vanilla extract. Blend until the mixture reaches a smooth and creamy texture.

                  - Taste the mixture, and if you prefer it sweeter, add a touch more honey or maple syrup to your liking.

                    Assemble the Bars:

                      - Once the oat base has cooled, pour the raspberry yogurt mixture over the oat layer. Use a spatula to evenly spread the yogurt layer across the base.

                        - Generously sprinkle the granola on top of the yogurt layer and gently press it down to ensure it adheres.

                          Freeze the Bars:

                            - Cover the baking dish with plastic wrap or foil to prevent freezer burn. Place it in the freezer and allow it to freeze for a minimum of 4 hours, or until it is completely solid.

                              Cut and Serve:

                                - Once solid, remove the dish from the freezer and allow it to sit at room temperature for a few minutes to soften slightly, making it easier to slice.
