8 oz (about 225 g) rotini pasta

1 lb (450 g) boneless, skinless chicken breasts

2 tbsp extra-virgin olive oil

1 tsp dried oregano

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

1 medium cucumber, diced

1 red bell pepper, diced

1/2 medium red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped for garnish

1/4 cup freshly squeezed lemon juice

1/4 cup Greek yogurt (optional for a creamy texture)

1 tsp garlic powder

1 tsp dried basil

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente, usually about 8-10 minutes. Once cooked, drain the pasta and rinse it under cold water to halt the cooking process. Allow it to cool completely before using.

    Prepare the Chicken: In a large skillet, heat 2 tablespoons of extra-virgin olive oil over medium heat. Season the chicken breasts liberally with dried oregano, salt, and pepper. Cook the chicken for about 6-7 minutes on each side, or until golden brown and cooked through (the internal temperature should reach 165°F or 74°C). Remove from heat and let the chicken rest for a few minutes before slicing it into bite-sized pieces.

      Combine the Ingredients: In a spacious mixing bowl, combine the cooled pasta, sliced chicken, cherry tomatoes, diced cucumber, diced red bell pepper, finely chopped red onion, sliced Kalamata olives, and crumbled feta cheese.
