Ingredients

2 cups frozen tater tots

1 cup cooked shredded chicken (preferably rotisserie for added flavor)

1 cup shredded Monterey Jack cheese

1 cup green chilies, chopped (use canned or freshly roasted)

1/2 cup sour cream

1/4 cup green onions, sliced (reserve some for garnish)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon ground cumin

Salt and pepper to taste

Cooking spray or a drizzle of olive oil for greasing

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Position the oven rack in the center to ensure even cooking.

Prepare the Tater Tots: On a baking sheet lined with parchment paper or lightly sprayed with cooking spray, evenly spread out the frozen tater tots. Bake in the oven for 20 minutes until they reach a golden-brown color and have a crispy texture. To ensure even cooking, flip them over halfway through the baking time.

Mix the Filling: In a large mixing bowl, combine the cooked shredded chicken, chopped green chilies, shredded Monterey Jack cheese, sour cream, sliced green onions, garlic powder, onion powder, and cumin. Stir the mixture thoroughly until all components are fully incorporated. Taste the mixture and season with salt and pepper as desired.

Stuff the Tater Tots: After the initial baking time for the tater tots, take them out of the oven. Carefully create a small indentation on the top of each tater tot using a small spoon or your fingers. Generously fill each indentation with the flavorful chicken mixture, packing it in until it's overflowing.

Bake Again: Place the stuffed tater tots back in the oven and continue baking for an additional 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden.

Garnish and Serve: Once done, remove the tater tots from the oven and allow them to cool for about a minute. Finish by sprinkling extra sliced green onions on top for a refreshing garnish. Serve these delightful treats hot, alongside a side of sour cream or your favorite dipping sauce for a complete experience.
