Ingredients

For the Grilled Chicken:

4 boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon salt

½ teaspoon freshly ground black pepper

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, peeled and diced

1 small red onion, finely chopped

1 red bell pepper, diced

1 jalapeño pepper, seeded and minced (adjust to taste)

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and freshly ground black pepper to taste

Instructions

Prepare the Marinade: In a small mixing bowl, combine the olive oil, garlic powder, smoked paprika, ground cumin, salt, black pepper, and lime juice. Whisk thoroughly until all the ingredients are well blended into a cohesive marinade.

Marinate the Chicken: Place the chicken breasts in a resealable plastic bag or a shallow dish suitable for marinating. Pour the prepared marinade over the chicken, ensuring each piece is thoroughly coated. Seal the bag or cover the dish and refrigerate for a minimum of 30 minutes, with a preference for 2 hours to enhance flavor absorption.

Make the Mango Salsa: In a separate medium bowl, mix together the diced mango, chopped red onion, diced red bell pepper, minced jalapeño, and chopped cilantro. Squeeze in the lime juice and season with salt and pepper. Gently toss all ingredients to combine, then taste and adjust seasoning as needed. Allow the salsa to sit at room temperature to let the flavors marry.

Preheat the Grill: Preheat your grill to medium-high heat. Clean the grill grates thoroughly to ensure a non-stick surface, then lightly oil them with a paper towel dipped in vegetable oil or spray.

Grill the Chicken: Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken breasts onto the heated grill. Cook for approximately 6-7 minutes on one side until you see nice grill marks, then flip and continue grilling for another 5-6 minutes or until the chicken reaches an internal temperature of 165°F (75°C).

Rest the Chicken: Once the chicken is cooked, transfer it to a cutting board or plate. Let it rest for about 5 minutes. This step helps to retain moisture within the chicken, keeping it juicy.

Serve: After resting, slice the grilled chicken into strips and arrange them elegantly on a serving platter. Spoon the mango salsa generously atop the chicken and garnish with additional cilantro leaves for a fresh touch.

Enjoy: Serve the dish with lime wedges on the side for an extra burst of flavor. Consider pairing it with a bed of fragrant rice or a vibrant green salad for a complete meal experience.
