Ingredients

For the Grilled Salmon:

4 salmon fillets (approximately 6 oz each)

2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon smoked paprika

½ teaspoon sea salt

½ teaspoon freshly ground black pepper

Juice of 1 lime (about 2 tablespoons)

For the Pineapple Salsa:

1 cup fresh pineapple, diced into small cubes

½ red bell pepper, finely diced

¼ red onion, finely chopped

1 jalapeño, seeded and minced (optional, for added spice)

¼ cup fresh cilantro, chopped

Juice of 1 lime (about 2 tablespoons)

½ teaspoon sea salt

¼ teaspoon freshly ground black pepper

Instructions

Prepare the Marinade for Salmon: In a medium-sized bowl, whisk together the olive oil, garlic powder, smoked paprika, sea salt, black pepper, and lime juice until well combined.

Marinate the Salmon: Place the salmon fillets in a shallow baking dish or a resealable zip-top bag. Pour the marinade evenly over the fillets, ensuring each piece is thoroughly coated. Cover the dish with plastic wrap or seal the bag and refrigerate for a minimum of 30 minutes, or up to 2 hours for a more intense flavor infusion.

Make the Pineapple Salsa: In a large mixing bowl, combine the diced pineapple, red bell pepper, red onion, jalapeño if using, chopped cilantro, lime juice, sea salt, and black pepper. Mix gently until all ingredients are well incorporated. Set the salsa aside, allowing it to sit at room temperature so the flavors can meld.

Preheat the Grill: Preheat your grill to medium-high heat, approximately 400°F (200°C). If you're using a grill pan on the stovetop, heat it over medium heat.

Grill the Salmon: Remove the salmon fillets from the marinade, discarding any leftover marinade. Carefully place the fillets skin-side down on the grill grates. Cook for about 6-7 minutes on each side, adjusting cooking time depending on the thickness of the fillets. The salmon is ready when it flakes easily with a fork and displays appealing grill marks.

Serve: Once grilled to perfection, remove the salmon from the heat and let it rest for about a minute. Generously spoon a portion of the pineapple salsa over each fillet.

Enjoy: Serve immediately with fresh lime wedges on the side and consider pairing with coconut rice or a colorful mixed greens salad for a complete and festive meal.
