1 lb large shrimp (peeled and deveined)

2 ears of fresh corn, husked and cut into 1-inch rounds

1 red bell pepper, cut into 1-inch pieces

1 green bell pepper, cut into 1-inch pieces

1/4 cup olive oil

3 cloves garlic, minced

1 tablespoon smoked paprika

1 teaspoon cayenne pepper (adjust based on your heat preference)

2 tablespoons fresh lemon juice

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

8 wooden skewers (soaked in water for 30 minutes)

Marinate the Shrimp: In a large bowl, whisk together the olive oil, minced garlic, smoked paprika, cayenne pepper, fresh lemon juice, and a pinch of salt and pepper. Add the peeled and deveined shrimp to the marinade and gently toss until they are well-coated.
