Ingredients
  

2 cups all-purpose flour

1 teaspoon active dry yeast

3/4 cup warm water (between 100°F and 110°F)

1 teaspoon sugar

1 teaspoon salt

2 tablespoons extra virgin olive oil

1/2 cup basil pesto (store-bought or homemade)

2-3 medium ripe tomatoes, thinly sliced

1 cup fresh mozzarella cheese, either sliced or torn into pieces

Fresh basil leaves for garnish

Balsamic glaze, for drizzling (optional)

Sea salt and freshly cracked black pepper, to taste

Instructions
 

Make the Flatbread Dough:

    - In a small bowl, combine the sugar with the warm water. Sprinkle the yeast over the top and let it sit for about 5-10 minutes, until it becomes frothy and bubbles form on the surface.

      - In a large mixing bowl, combine the flour and salt. Create a well in the center, then pour in the yeast mixture along with the olive oil. Mix using a fork or your hands until the ingredients come together to form a rough dough.

        - Transfer the dough to a floured surface and knead it for about 5-7 minutes until it becomes smooth and elastic. If the dough is sticky, add a little more flour as needed to make it manageable.

          Let the Dough Rise:

            - Place the kneaded dough into a lightly greased bowl, turning it once to coat in oil. Cover the bowl with a damp kitchen towel or plastic wrap. Allow it to rise in a warm environment for about 1 hour, or until it has doubled in size.

              Prepare the Grill:

                - Preheat your grill to medium-high heat (approximately 400°F). If you are using a gas grill, make sure the grates are clean and lightly greased to prevent sticking.

                  Shape the Flatbreads:

                    - Once the dough has risen, punch it down to release air. Divide it into two equal portions. Roll each piece out on a floured surface to create an oval shape, until it is about 1/4 inch thick.

                      Grill the Flatbreads:

                        - Carefully place the flatbreads onto the preheated grill. Grill each side for about 2-3 minutes, or until you see distinct grill marks and the bread easily lifts off the grates. Flip the flatbreads and grill the other side for an additional 2 minutes.

Garnish with fresh basil leaves, and sprinkle with sea salt and black pepper to taste. For an added touch of flavor, drizzle with balsamic glaze if desired. Cut into wedges and serve warm.
