Ingredients

1 pre-made 9-inch pie crust

1 cup broccoli florets, chopped

1 cup bell peppers (choose red, yellow, or orange), diced

1 cup zucchini, grated

1 cup mushrooms, sliced

1 small onion, finely chopped

3 large eggs

1 cup heavy cream

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper, to taste

Fresh parsley, for garnish (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). This allows for even cooking once your quiche is ready to bake.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Once hot, add the finely chopped onion and sauté until it becomes translucent, about 3-4 minutes. Next, introduce the chopped broccoli, diced bell peppers, grated zucchini, and sliced mushrooms to the skillet. Season the mixture with salt, pepper, dried thyme, and dried oregano. Continue to cook for an additional 5-7 minutes, stirring occasionally, until the vegetables are softened and their aromas are released. Remove the skillet from heat and set aside to cool slightly.

Prepare the Egg Mixture: In a separate mixing bowl, whisk together the 3 large eggs and 1 cup of heavy cream until thoroughly combined. Gently fold in the shredded cheddar cheese and grated Parmesan cheese. Add a pinch of salt and pepper to taste, ensuring the mixture is flavorful.

Assemble the Quiche: Evenly distribute the sautéed vegetable mixture over the bottom of the pre-made pie crust. Carefully pour the egg and cheese mixture over the vegetables, making sure it’s evenly spread throughout for consistent flavor and texture.

Bake the Quiche: Place the assembled quiche on the middle rack of your preheated oven. Bake for 35-40 minutes, or until the filling is set and the top achieves a light golden color. To check for doneness, you can insert a knife into the center; it should come out clean.

Cool and Serve: After baking, remove the quiche from the oven and allow it to cool for about 10-15 minutes. This cooling period will help the quiche set more firmly. If desired, garnish with fresh parsley for a pop of color. Slice the quiche and serve warm or at room temperature for a delightful meal.
