4 large ripe avocados

2 medium ripe Hatch green chilis, roasted, peeled, and diced

1 cup cherry tomatoes, quartered

1/4 cup red onion, finely diced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper, to taste

1 teaspoon garlic powder

8 slices whole-grain bread

Olive oil, for drizzling

Crumbled feta cheese (optional, for topping)

Lime wedges (for garnish)

Prep the Avocados: Begin by halving the avocados and carefully removing the pits. Scoop the creamy flesh into a large mixing bowl. Using a fork, mash the avocados until they reach a smooth consistency, but keep them slightly chunky for texture.

    Mix Ingredients: To the mashed avocado, add the diced roasted Hatch chilis, quartered cherry tomatoes, finely diced red onion, chopped cilantro, lime juice, garlic powder, and season with salt and pepper.
