2 cups Hatch green chiles, roasted, peeled, and diced (canned is a good substitute if fresh are unavailable)

1 medium onion, diced

3 cloves garlic, minced

4 medium Yukon Gold or red potatoes, diced

3 carrots, sliced into rounds

2 cups chicken or vegetable broth

1 can (15 oz) diced tomatoes, with their juice

1 can (15 oz) black beans, drained and rinsed

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp dried oregano

Salt and pepper to taste

Fresh cilantro, for garnishing
