Healthy Twist on Cheesy Spinach Dip Stuffed Mushrooms

Ingredients
  

16 large cremini or button mushrooms

2 cups fresh spinach, chopped

1 cup cream cheese, softened

1/2 cup Greek yogurt

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 cloves garlic, minced

1/2 tsp onion powder

1/2 tsp black pepper

1/4 tsp red pepper flakes (optional)

2 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Set your oven to preheat at 350°F (175°C).

    Wipe the mushrooms clean with a moist cloth and gently extract the stems, ensuring the caps remain whole.

      In a skillet, warm olive oil over medium heat. Introduce the minced garlic and sauté for about a minute until aromatic.

        Add the chopped spinach to the pan and cook for 2-3 minutes, until it has wilted. Remove it from heat and allow it to cool slightly.

          In a mixing bowl, whisk together the softened cream cheese, Greek yogurt, 3/4 cup of mozzarella cheese, Parmesan cheese, onion powder, black pepper, and red pepper flakes (if desired). Mix until fully blended.

            Gently fold the cooked spinach mixture into the cheese blend until thoroughly incorporated.

              Generously fill each mushroom cap with the spinach and cheese mixture.

                Arrange the stuffed mushrooms on a baking sheet lined with parchment paper.

                  Top the stuffed mushrooms with the remaining mozzarella cheese.

                    Bake in the heated oven for 20-25 minutes, or until the mushrooms are soft and the cheese is melted and golden.

                      Take them out of the oven and allow them to cool for a few minutes. Before serving, sprinkle chopped fresh parsley on top.
