Ingredients

1 bone-in, skin-on turkey breast (4-5 pounds)

1 cup unsalted butter, softened to room temperature

4 cloves garlic, minced

2 tablespoons fresh rosemary, finely chopped

2 tablespoons fresh thyme, finely chopped

2 tablespoons fresh sage, finely chopped

1 tablespoon fresh parsley, finely chopped

Zest of 1 lemon

Juice of 1 lemon

1 tablespoon sea salt

1 teaspoon freshly ground black pepper

1 cup low-sodium chicken broth

Optional: Fresh herbs and lemon slices for garnish

Instructions

Preheat the Oven: Set your oven to 325°F (160°C) to ensure it reaches the right temperature for roasting.

Prepare the Herb Butter: In a medium mixing bowl, blend the softened butter with the minced garlic, chopped rosemary, thyme, sage, parsley, lemon zest, lemon juice, sea salt, and black pepper. Stir until all the herbs and seasonings are fully incorporated into the butter to create a flavorful herb mixture.

Prepare the Turkey Breast: Pat the turkey breast dry with paper towels to ensure that the skin gets crispy as it roasts. Gently run your fingers between the skin and the meat to loosen the skin without tearing it—this will allow the herb butter to flavor the meat directly.

Apply the Herb Butter: Scoop half of the herb butter mixture and carefully spread it under the loosened skin, ensuring even coverage. Then, massage the remaining herb butter all over the outside of the turkey breast, making sure every inch is coated for maximum flavor.

Prepare for Roasting: Place the seasoned turkey breast in a large roasting pan with the breast side facing up. Pour the low-sodium chicken broth into the bottom of the pan, which will help keep the turkey moist during cooking.

Roast the Turkey: Cover the roasting pan loosely with aluminum foil to prevent over-browning. Roast in the preheated oven for about 1 hour. After that, remove the foil and continue roasting for an additional 30-45 minutes, or until the thickest part of the breast registers an internal temperature of 165°F (74°C).

Rest and Serve: Once fully cooked, take the turkey out of the oven and let it rest for 15-20 minutes before carving. This resting period allows the juices to redistribute within the turkey, resulting in a juicier final dish. If desired, garnish with fresh herbs and lemon slices for a vibrant touch.

Carve and Enjoy: Slice the turkey breast into serving pieces and enjoy it with your favorite sides! Revel in the rich and savory flavors that the herb butter has infused into the succulent turkey.
