2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 can (28 oz) crushed tomatoes

2 cups vegetable broth

1 teaspoon granulated sugar

1 teaspoon dried basil

½ teaspoon salt

¼ teaspoon freshly ground black pepper

½ cup heavy cream (or substitute with coconut cream for a vegan option)

½ cup fresh basil leaves, finely chopped (plus additional leaves for garnish)

Instructions
 

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Once hot, add the chopped onion and cook for approximately 5 minutes, or until it becomes soft and translucent. Next, stir in the minced garlic and sauté for another minute, allowing it to release its beautiful aroma.

    Add Tomatoes & Seasonings: Pour in the crushed tomatoes along with the vegetable broth. Add the sugar, dried basil, salt, and black pepper. Stir the mixture well, bringing it to a gentle simmer. Allow it to cook uncovered for about 20 minutes, stirring occasionally to avoid any sticking at the bottom of the pot.

      Blend the Soup: After simmering, remove the pot from the heat. Using an immersion blender, carefully blend the soup until it’s completely smooth. If you don’t have an immersion blender, you can transfer the soup in batches to a countertop blender, blending each portion until silky.

        Incorporate Cream: Place the blended soup back into the pot over low heat. Gradually stir in the heavy cream (or coconut cream) and the freshly chopped basil leaves. Allow it to warm through for an additional 5 minutes, taking care not to let it boil.

          Taste & Adjust: Prior to serving, taste the soup and adjust the seasoning as needed, adding more salt, pepper, or basil according to your preferences.
