1 lb large shrimp, peeled and deveined

2 tablespoons honey

3 cloves garlic, finely minced

2 tablespoons soy sauce (preferably low sodium)

1 tablespoon olive oil

1 teaspoon fresh ginger, finely grated

¼ teaspoon red pepper flakes (optional for heat)

Salt and black pepper to taste

Green onions, thinly sliced (for garnish)

For the Cauliflower Rice:

1 medium head of cauliflower, riced (approximately 4 cups)

1 tablespoon olive oil

2 cloves garlic, finely minced

Salt and black pepper, to taste

2 tablespoons fresh cilantro, chopped (for garnish)

Prepare the Shrimp Marinade: In a large mixing bowl, combine the honey, minced garlic, soy sauce, olive oil, grated ginger, and red pepper flakes (if desired). Season with a pinch of salt and black pepper. Whisk the ingredients together until you have a smooth marinade.

    Marinate the Shrimp: Add the peeled and deveined shrimp to the mixing bowl with the marinade. Gently toss the shrimp until they are fully coated in the marinade. Allow the shrimp to marinate for 15-20 minutes, as this will enhance the flavor.

      Make the Cauliflower Rice: While the shrimp is marinating, prepare the cauliflower rice. Break the cauliflower into smaller florets and pulse them in a food processor until they achieve a rice-like texture. In a large pan, heat 1 tablespoon of olive oil over medium heat.
