Zest of 1 lemon

Prepare the Cauliflower:

    - Begin by removing the green leaves from the cauliflower head and carefully trimming the stem to create a flat base that will keep it stable.

      - Stand the cauliflower upright on a cutting board. Using a sharp chef's knife, slice the cauliflower into 1-inch thick “steaks.” Make sure to reserve any florets that may fall off; they will be roasted alongside the steaks.

        Make the Marinade:

          - In a medium-sized mixing bowl, combine the extra virgin olive oil, minced garlic, lemon zest, lemon juice, smoked paprika, ground cumin, and a generous pinch of salt and pepper.

            - Whisk the ingredients together vigorously until the marinade is completely blended and smooth.

              Marinate the Cauliflower:

                - Transfer the cauliflower steaks to a spacious baking dish. Pour the marinade over the steaks, ensuring each piece is thoroughly coated. Don’t forget to include any florets that were set aside in the dish as well.
