Ingredients

1 lb large shrimp, peeled and deveined

2 cups fresh broccoli florets

4 cloves garlic, minced

1 lemon (juice and zest, divided)

3 tablespoons olive oil

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon dried oregano

Salt and pepper, to taste

2 cups cooked quinoa or brown rice (for serving)

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Marinate the Shrimp: In a mixing bowl, combine the peeled shrimp with the minced garlic, juice and zest of one lemon, 1 tablespoon of olive oil, red pepper flakes, dried oregano, and a pinch of salt and pepper. Toss the ingredients gently until the shrimp are evenly coated. Cover the bowl and allow the shrimp to marinate for at least 15 minutes to enhance the flavors.

Cook the Broccoli: While the shrimp is marinating, fill a pot with water and bring it to a rolling boil. Once boiling, add the fresh broccoli florets and blanch them for about 2-3 minutes, just until they are bright green and tender-crisp. Carefully drain the broccoli and plunge it into a bowl of ice water to stop the cooking process. After a few minutes, drain the broccoli again and set it aside.

Sauté the Shrimp: In a large skillet, heat the remaining 2 tablespoons of olive oil over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook the shrimp for about 2-3 minutes on each side until they are pink and opaque, ensuring they do not overcrowd the skillet for even cooking.

Combine Ingredients: Once the shrimp are cooked, add the blanched broccoli to the skillet. Toss the shrimp and broccoli together gently, ensuring everything is combined and heated through. Taste and adjust the seasoning with additional salt and pepper if desired.

Serve: To present the dish, spoon the shrimp and broccoli mixture over a bed of warm cooked quinoa or brown rice. Finish by garnishing with freshly chopped parsley, and serve with lemon wedges on the side for an extra burst of zesty flavor.
