1 lb large shrimp, peeled and deveined

4 medium zucchinis, spiralized into noodles (or thin strips)

4 cloves garlic, finely minced

1/4 cup extra virgin olive oil, divided

Juice of 2 fresh lemons

Zest of 1 lemon

1/2 tsp red pepper flakes (adjust to your spice preference)

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, chopped

Optional: freshly grated Parmesan cheese for garnish

Prepare the Zucchini Noodles:

    - Use a spiralizer to create noodles from the zucchinis. If you don’t have one, you can use a vegetable peeler to slice the zucchinis into thin strips. Set aside the noodles on a paper towel to absorb excess moisture.

      Marinate the Shrimp:

        - In a medium bowl, combine the peeled and deveined shrimp with the minced garlic, 3 tablespoons of olive oil, lemon juice, lemon zest, red pepper flakes, and a generous pinch of salt and black pepper.
