Lemon Poppy Seed Muffins Yogurt Glaze

1 ½ cups all-purpose flour

½ cup granulated sugar

1 tablespoon poppy seeds

2 teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 large egg

¾ cup plain yogurt (Greek or regular)

⅓ cup vegetable oil

2 tablespoons freshly squeezed lemon juice

Zest of 1 large lemon (approximately 1 tablespoon)

For the Yogurt Glaze:

½ cup powdered sugar

2 tablespoons plain yogurt

1 tablespoon freshly squeezed lemon juice

1 teaspoon lemon zest

Preheat the Oven: Set your oven to 350°F (175°C). Prepare your muffin tin by greasing it or lining it with paper liners for easy removal later.

    Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, poppy seeds, baking powder, baking soda, and salt. Use a whisk to ensure these ingredients are well blended.

      Combine Wet Ingredients: In a separate bowl, whisk together the large egg, yogurt, vegetable oil, fresh lemon juice, and lemon zest. Mix until the mixture is smooth and evenly combined.

        Combine Mixtures: Carefully fold the wet mixture into the dry ingredients using a spatula. Blend gently until just combined; it's important not to overmix—some lumps are totally fine.

          Fill the Muffin Tin: Spoon the muffin batter into the prepared muffin cups, filling each about two-thirds full. This allows enough space for the muffins to rise while baking.
