1 lb pork tenderloin, trimmed and sliced into 1-inch thick medallions

1/4 cup pure maple syrup

2 tablespoons Dijon mustard

1 tablespoon soy sauce

2 cloves garlic, minced

1 teaspoon fresh rosemary, finely chopped (or 1/2 teaspoon dried)

1/2 teaspoon freshly ground black pepper

1 tablespoon olive oil

Salt, to taste

Place the pork medallions in a resealable plastic bag or shallow dish, pouring the marinade over them. Seal the bag or cover the dish, and refrigerate for at least 30 minutes, allowing the flavors to meld (up to 2 hours is ideal for a richer flavor).

    Preheat the Oven: Set your oven to preheat at 400°F (200°C).
