4 medium-sized russet potatoes

2 cups cooked chicken breast, shredded

1 cup Alfredo sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (a blend of oregano, basil, and thyme)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Begin by preheating your oven to 400°F (200°C) to ensure it's hot enough for baking the potato slices.

    Prepare the Potatoes: Wash each russet potato thoroughly and peel the skins. Carefully slice them into thin rounds, aiming for about 1/4 inch thick to ensure even cooking and stacking.

      Season the Potatoes: In a large mixing bowl, add the potato rounds. Drizzle the olive oil over them, then sprinkle in the garlic powder, onion powder, dried Italian herbs, salt, and black pepper. Toss the potatoes until every slice is evenly coated in the oil and seasonings.

        Bake the Potato Rounds: Arrange the seasoned potato slices in a single layer on two separate baking sheets. Bake in the oven for approximately 20-25 minutes, flipping the slices halfway through. They should emerge golden and crispy.

          Mix the Chicken: While the potatoes bake, take a separate bowl and combine the shredded cooked chicken with the Alfredo sauce. Stir well until the chicken is fully coated and ready for stacking.

            Assemble the Stacks: Once the potato slices have cooled slightly, begin assembling your stacks. Layer them by placing one potato round on a plate, adding a spoonful of the chicken Alfredo mixture on top, followed by a sprinkle of mozzarella cheese. Repeat this process for 3-4 layers, finishing with another layer of potato, and generously topping it off with mozzarella and Parmesan cheese.
