Mini Crispy Falafel Lettuce Cups

Ingredients
  

1 cup dried chickpeas, soaked overnight in water

1 small onion, finely chopped

2 cloves garlic, minced

1 cup fresh parsley, chopped

1 cup fresh cilantro, chopped

1 tsp ground cumin

1 tsp ground coriander

½ tsp cayenne pepper (adjust according to your spice preference)

Salt and pepper, to taste

1 tsp baking powder

3-4 tbsp all-purpose flour (adjust more if needed)

Oil, for frying (vegetable or canola oil works well)

1 head of butter or romaine lettuce, leaves separated and cleaned

Optional: Tahini sauce or yogurt dressing for drizzling on top

Prepare the Chickpeas: After soaking overnight, drain and rinse the chickpeas thoroughly. In a food processor, combine the soaked chickpeas with the finely chopped onion, minced garlic, parsley, cilantro, cumin, coriander, cayenne pepper, and a pinch of salt and pepper. Pulse the mixture until it is coarsely ground, ensuring it retains some texture without becoming a puree.

    Mix the Ingredients: Transfer the ground mixture to a large mixing bowl. Incorporate the baking powder into the mixture, followed by the all-purpose flour. Gradually mix in the flour until the mixture binds together but remains slightly moist; it should be moldable into balls without crumbling apart.

      Shape the Falafels: With your hands, form small balls or patties from the mixture, aiming for a size similar to that of a golf ball. This will help them cook evenly and maintain their texture.

        Heat the Oil: In a deep frying pan, pour in about 1-2 inches of oil and heat it over medium heat. To verify the temperature, drop a small bit of the falafel mixture into the oil; if it sizzles right away, your oil is hot enough to start frying.

          Fry the Falafels: Carefully add the formed falafels into the hot oil in batches, ensuring not to overcrowd the pan. Fry them for approximately 3-4 minutes on each side or until they achieve a beautiful golden brown color and a crispy exterior. Once done, remove them using a slotted spoon and place them on a plate lined with paper towels to absorb excess oil.

            Assemble the Lettuce Cups: While frying the falafels, gently rinse the lettuce leaves and pat them dry with a clean towel or paper towel. These leaves will serve as your edible cups!

              Serve: Take 1-2 of the crispy falafel balls and nestle them into each lettuce leaf. Optionally, drizzle with tahini sauce or yogurt dressing, and sprinkle with some additional chopped parsley or cilantro for a burst of freshness.
