1 ripe avocado, thoroughly mashed

1/2 cup diced bell pepper (choose red or yellow for sweetness)

1/4 cup shredded cheese (select either cheddar or mozzarella for a creamy finish)

1/4 teaspoon garlic powder

1/4 teaspoon onion powder

1/4 teaspoon salt

1/8 teaspoon black pepper

1 tablespoon olive oil (for greasing the muffin tin)

Optional toppings: chopped fresh herbs (such as cilantro or parsley), diced tomatoes, or sliced jalapeños for extra flavor

Instructions
 

Preheat your oven to 350°F (175°C). While it’s heating, use a paper towel or pastry brush to lightly grease a muffin tin with olive oil. This step ensures easy removal of the muffin rounds after baking.

    In a medium mixing bowl, combine the thoroughly mashed avocado, diced bell pepper, garlic powder, onion powder, salt, and black pepper. Use a fork to mix well until all ingredients are evenly incorporated.

      In a separate larger bowl, use a whisk to beat the egg whites until they are frothy. They should be airy yet still pourable—not overly stiff.

        Gently fold the frothy egg whites into the avocado mixture using a rubber spatula. Be careful to maintain the airiness of the egg whites to ensure light and fluffy muffin rounds; mix until just combined.
