Ingredients

1 lb ground turkey

1 cup finely diced bell peppers (choose red, yellow, or orange for vibrant colors)

1 cup finely diced zucchini

1 cup finely chopped fresh spinach

1/2 cup onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1 package (8-10 count) refrigerated biscuit dough

1 cup shredded cheese (either cheddar or mozzarella will work well)

Fresh herbs (such as parsley or basil), for garnish

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Line a baking sheet with parchment paper for easy cleanup.

Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the finely chopped onion and minced garlic to the skillet. Sauté for about 3-4 minutes, or until the onion becomes translucent and aromatic.

Cook the Ground Turkey: Add the ground turkey to the skillet, using a spatula to break it into smaller pieces. Cook for approximately 5 minutes, stirring frequently, until the turkey is browned and cooked through.

Incorporate the Vegetables and Spices: Stir in the diced bell peppers, zucchini, chopped spinach, dried oregano, paprika, salt, and black pepper. Continue cooking for an additional 3-4 minutes, until the vegetables are tender and the turkey is completely cooked. Once done, remove the skillet from heat and set the mixture aside.

Prepare the Biscuit Dough: Open the package of refrigerated biscuit dough and separate the biscuits. Using a rolling pin, flatten each biscuit until it's about 1/4 inch thick for easy stacking.

Assemble the Stacks: On half of the flattened biscuits, spoon a generous amount of the turkey and veggie mixture. Sprinkle shredded cheese over the top of the filling, then place another flattened biscuit on top to create a stack.

Bake the Stacks: Arrange the assembled stacks on the prepared baking sheet. Bake them in the preheated oven for 12-15 minutes, or until the biscuits are golden brown and fully cooked.

Garnish and Serve: Once baked, remove the biscuit stacks from the oven and allow them to cool for a few minutes. Finish by garnishing with fresh herbs for a pop of color and flavor before serving. Enjoy your delightful Mini Turkey and Veggie Biscuit Stacks!
