Ingredients

1 cup cooked quinoa

1/2 cup grated zucchini, excess moisture squeezed out

1/2 cup finely chopped bell pepper (any color)

1/2 cup canned black beans, rinsed and drained

1/4 cup corn kernels (fresh, frozen, or canned)

1/4 cup grated carrot

1/4 cup chopped green onions

1/4 cup shredded cheese (cheddar or mozzarella)

2 large eggs

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/4 teaspoon smoked paprika (optional)

Olive oil spray (for greasing)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C). Prepare a mini muffin tin by lining it with paper liners or lightly greasing it with olive oil spray to prevent sticking.

Mix Ingredients: In a large mixing bowl, combine the cooked quinoa, grated zucchini, chopped bell pepper, rinsed black beans, corn, grated carrot, and chopped green onions. Stir thoroughly to ensure all ingredients are evenly distributed.

Add Cheese and Eggs: To the vegetable mixture, add the shredded cheese, eggs, garlic powder, onion powder, smoked paprika (if using), and season with salt and pepper. Mix everything together until the ingredients are well combined and the mixture begins to stick together.

Portion the Mixture: Using a spoon or a cookie scoop, fill each muffin tin well with the quinoa mixture. Pack the mixture down gently to help the bites maintain their shape while baking.

Bake: Carefully place the muffin tin into the preheated oven. Bake the quinoa bites for 20-25 minutes, or until they turn golden brown on top and feel firm to the touch.

Cool and Serve: Once baked, allow the mini veggie quinoa bites to cool in the muffin tin for a few minutes before delicately removing them. Serve warm or at room temperature with your choice of dipping sauce, such as a zesty spicy salsa or a smooth creamy yogurt sauce.

Store Leftovers: If you have any bites leftover, store them in an airtight container in the refrigerator for up to 3 days. To serve, reheat in the oven or microwave until warmed through.
