Ingredients

1 cup all-purpose flour (heat-treated)

½ cup unsalted butter, softened to room temperature

¾ cup brown sugar, packed tightly

¼ cup granulated sugar

2 teaspoons pure vanilla extract

2 tablespoons milk (or a dairy-free alternative such as almond or oat milk)

½ cup mini chocolate chips

¼ cup chopped nuts (optional; consider walnuts or pecans)

A pinch of sea salt

Instructions

Prepare the Flour: To ensure the flour is safe for eating raw, start by heat-treating it. Spread the flour evenly on a baking sheet and bake in the oven at 350°F (175°C) for about 5–7 minutes, stirring halfway through to avoid browning. Once done, remove it from the oven and set aside to cool completely.

Cream Butter and Sugars: In a large mixing bowl, use a handheld mixer or a stand mixer fitted with a paddle attachment to cream together the softened butter, packed brown sugar, and granulated sugar. Beat on medium speed for about 2-3 minutes, or until the mixture is light, fluffy, and creamy.

Add Vanilla and Milk: Pour the vanilla extract and milk into the butter-sugar mixture. Mix on low speed until everything is well combined and smooth.

Combine Dry Ingredients: Slowly add the cooled heat-treated flour and a pinch of sea salt to the mixing bowl. Stir on low speed until everything is just combined, being careful not to overmix as you want to maintain a cookie dough texture.

Fold in Add-Ins: With a silicone spatula, gently fold in the mini chocolate chips and chopped nuts (if using). Continue to fold until the chocolate chips and nuts are evenly distributed throughout the dough.

Form Balls: Using a tablespoon or a cookie scoop, portion out the dough and roll each scoop into a ball using your hands. Place the rolled cookie dough balls onto a baking sheet lined with parchment paper.

Chill: Refrigerate the cookie dough balls for at least 30 minutes. This will help them firm up for enjoyable snacking.

Serve & Store: Indulge in your delightful no-bake cookie dough balls straight from the fridge! Any leftovers can be stored in an airtight container in the refrigerator for up to one week.

Prep Time, Total Time, Servings: 15 minutes | 1 hour (including chilling) | Yields 12-15 cookie dough balls
