2 cups fresh strawberries, hulled and chopped

1 cup Greek yogurt (vanilla flavored)

1 cup chilled coconut cream

1/2 cup honey or maple syrup (adjust based on your desired sweetness level)

1 teaspoon pure vanilla extract

1 cup granola or crushed graham crackers (for the crust)

1/4 cup melted coconut oil (to bind the crust)

A pinch of sea salt

Prepare the Crust: In a medium bowl, mix together the granola or crushed graham crackers, melted coconut oil, and a pinch of sea salt. Stir until the crumbs are fully coated and have a slightly wet texture. Press this mixture firmly into the bottom of an 8x8-inch baking dish, creating an even and compact crust layer.

    Blend the Strawberry Mixture: In a blender or food processor, add the chopped strawberries, Greek yogurt, chilled coconut cream, honey (or maple syrup), and vanilla extract. Blend until the mixture is smooth and creamy. Taste the mixture and adjust the sweetness by adding more honey or maple syrup if desired.

      Layer the Mixture: Carefully pour the strawberry mixture over the prepared crust in the baking dish. Use a spatula to spread it evenly, ensuring that it covers the crust completely.

        Freeze: Cover the baking dish with plastic wrap or aluminum foil. Place it in the freezer and allow it to freeze for at least 4 hours, or until the bars are completely set and firm to the touch.
