1 lb (450g) flank steak, thinly sliced against the grain

2 cups broccoli florets

1 red bell pepper, sliced into thin strips

3 cloves garlic, minced

1-inch piece of fresh ginger, grated

3 tablespoons low-sodium soy sauce (divided)

2 tablespoons oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil

1 tablespoon sesame oil

1 tablespoon rice vinegar

1 tablespoon brown sugar

Salt and freshly ground black pepper, to taste

Cooked jasmine rice or noodles, for serving

Sesame seeds and sliced green onions, for garnish

Instructions
 

Marinate the Beef: In a medium mixing bowl, combine the thinly sliced flank steak with 1 tablespoon of soy sauce, cornstarch, and a pinch of salt and freshly ground black pepper. Mix everything together until the beef is evenly coated. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes to allow the flavors to meld.

    Prepare the Sauce: In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, oyster sauce, sesame oil, rice vinegar, and brown sugar until well combined. Set the sauce mixture aside to let the flavors develop.

      Cook the Beef: Heat a large skillet or wok over medium-high heat and add the vegetable oil. Once the oil is shimmering, carefully add the marinated beef in a single layer (cook in batches if needed to avoid overlapping). Sear the beef for about 2-3 minutes, or until it develops a nice brown crust. Once browned, transfer the beef to a plate and set it aside.

        Sauté the Vegetables: In the same skillet, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant; be careful not to burn them. Add the broccoli florets and sliced red bell pepper to the skillet. Continue to stir-fry for another 3-4 minutes, allowing the vegetables to become tender yet maintain a crisp texture.

          Combine and Sauce It Up: Return the cooked beef to the skillet with the sautéed vegetables. Pour the prepared sauce over the beef and veggies. Toss everything together gently to ensure the sauce evenly coats all the ingredients. Cook for an additional 2 minutes, allowing the sauce to heat through and thicken slightly.
