One-Pot Fig Jam Recipe

2 pounds fresh figs, stems removed and quartered

1 cup granulated sugar (adjust based on your sweetness preference)

1/4 cup freshly squeezed lemon juice

1/4 cup water

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional, for warmth)

1/4 teaspoon salt

1 tablespoon balsamic vinegar (optional, for added depth)

Prepare the Figs: Start by rinsing the fresh figs under cold running water to remove any dirt. Carefully remove the stems and quarter each fig. Once completed, set the quartered figs aside in a large mixing bowl.

    Combine Ingredients: In a large pot or Dutch oven, combine the quartered figs, granulated sugar, freshly squeezed lemon juice, and water. If you choose to incorporate balsamic vinegar and ground cinnamon for extra flavor, add those in as well. Gently stir the mixture, being careful not to crush the figs too much at this stage.

      Cook the Mixture: Place the pot over medium heat and allow the fig mixture to come to a gentle simmer. Make sure to stir occasionally. As the mixture heats, the sugar will dissolve and the figs will begin to soften.

        Simmer: Once you notice a gentle simmer, reduce the heat to low. Let the jam cook for about 30-40 minutes, stirring every 10 minutes to prevent sticking and promote even cooking. The goal is for the mixture to thicken adequately; it should be thick enough to coat the back of a spoon.

          Test Consistency: After about 30-40 minutes, perform a consistency test. If the jam remains runny, continue cooking for additional time until it thickens to your preferred consistency.

            Add Vanilla: Once the desired thickness is achieved, take the pot off the heat and stir in the vanilla extract and salt. Give the jam a taste, adjusting the sweetness or acidity as needed based on your preferences.

              Cool and Store: Allow the jam to cool in the pot for approximately 15 minutes. After this, carefully transfer the jam into sterilized jars while it's still warm. Secure the jars with their lids.

                Refrigerate: Let the jars cool completely at room temperature. After they have cooled, move them to the refrigerator. While the jam can be enjoyed after a few hours, the flavors truly mature if allowed to rest for a day or two.
