Ingredients

For the Parmesan-Crusted Pork:

4 boneless pork chops (approximately 6 oz each)

1 cup grated Parmesan cheese

1 cup panko breadcrumbs (for extra crunch)

1 teaspoon garlic powder

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (optional for heat)

Salt and pepper, to taste

2 large eggs

1 tablespoon Dijon mustard

2 tablespoons olive oil (for drizzling)

For the Roasted Carrots:

1 lb baby carrots (or regular carrots, peeled and cut into ½ inch sticks)

2 tablespoons olive oil

1 tablespoon honey

1 teaspoon ground cumin

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This will ensure it reaches the right temperature by the time your preparation is complete.

Prepare the Roasted Carrots: In a large mixing bowl, add the baby carrots. Drizzle with olive oil and honey, then sprinkle in the ground cumin, salt, and pepper. Toss everything together until the carrots are well-coated. Spread the seasoned carrots out in a single layer on one half of a large baking sheet.

Set Up a Breading Station for the Pork: In a shallow dish, combine the grated Parmesan cheese, panko breadcrumbs, garlic powder, dried oregano, red pepper flakes (if using), and a pinch of salt and pepper. In a separate bowl, whisk together the eggs and Dijon mustard until the mixture is smooth and homogeneous.

Breadcrumb the Pork Chops: Take each pork chop and dip it into the egg mixture, allowing any excess to drip off. Next, coat the pork chop in the Parmesan-breadcrumb mixture, pressing down firmly to ensure the crust adheres well. Arrange the breaded pork chops on the other half of the baking sheet beside the carrots.

Drizzle and Bake: Lightly drizzle olive oil over the breaded pork chops to promote a crispy texture during baking. Place the baking sheet in your preheated oven and bake for 20-25 minutes. The pork is ready when it reaches an internal temperature of 145°F (63°C) and the crust is a beautiful golden brown.

Finish and Serve: After baking, remove the baking sheet from the oven. Allow the pork chops to rest for about 5 minutes before slicing, which helps to retain their juices. If desired, toss the roasted carrots with freshly chopped parsley to elevate their flavor and presentation. Serve the crispy Parmesan-crusted pork chops alongside the sweet, caramelized roasted carrots.
