Ingredients

2 cups uncooked fusilli or penne pasta

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), halved

1/2 cup fresh basil leaves, roughly chopped

1/4 cup balsamic glaze

1/4 cup extra virgin olive oil

1 teaspoon kosher salt

1/2 teaspoon freshly ground black pepper

1/2 teaspoon garlic powder

1/4 teaspoon crushed red pepper flakes (optional for heat)

4 small mason jars or containers for serving

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente, usually about 8-10 minutes. Drain the pasta and rinse it under cold running water to halt the cooking process and cool it down. Set the pasta aside in a bowl.

Prepare the Jar Ingredients: In a large mixing bowl, combine the halved cherry tomatoes, halved mozzarella balls, and roughly chopped basil. Drizzle the mixture with balsamic glaze and extra virgin olive oil. Season with kosher salt, freshly ground black pepper, garlic powder, and the optional crushed red pepper flakes. Toss the mixture gently to ensure everything is evenly coated.

Assemble the Jars: Begin layering the pasta in each mason jar by adding 1/2 cup of the cooled pasta to the bottom. Spoon the tomato and mozzarella mixture on top, distributing it evenly across the jars. Fill each jar just below the rim to leave some space for easy mixing later.

Add Additional Toppings: For an extra touch, consider sprinkling additional chopped basil on top of each jar or adding a light drizzle of balsamic glaze for enhanced flavor and presentation.

Seal and Store: Secure the lids tightly on each mason jar and refrigerate them until you’re ready to serve. These delightful jars can be prepared up to 2 days in advance, making them perfect for meal prep or quick lunches.

Serve: When it's time to enjoy, shake each jar gently to mix the ingredients, or transfer the contents into a bowl for a more refined serving option. These pasta caprese jars are delicious served cold or at room temperature!
