Ingredients

For the crust:

1 ½ cups graham cracker crumbs

⅓ cup unsalted butter, melted

¼ cup granulated sugar

For the cream layer:

8 oz cream cheese, softened to room temperature

1 cup powdered sugar, sifted

1 tsp vanilla extract

1 cup heavy whipping cream, chilled

For the peach layer:

3 ripe peaches, diced (approximately 2 cups)

2 tbsp freshly squeezed lemon juice

2 tbsp granulated sugar (adjust according to the sweetness of the peaches)

1 tsp cornstarch

Instructions

Prepare the crust:

    - In a medium-sized bowl, combine the graham cracker crumbs, melted unsalted butter, and granulated sugar. Mix thoroughly until the texture resembles wet sand and is crumbly.

      - Press the mixture firmly into the bottom of an 8x8 inch baking dish to create a uniform layer.

        - Place the baking dish in the refrigerator and chill for about 15 minutes while you prepare the cream layer.

          Make the cream layer:

            - In a mixing bowl, use a handheld mixer to beat the softened cream cheese on medium speed until it becomes smooth and creamy.

              - Gradually add in the sifted powdered sugar and vanilla extract, mixing until fully incorporated and creamy.

                - In a separate bowl, pour in the chilled heavy whipping cream and whip until stiff peaks form.

                  - Gently fold the whipped cream into the cream cheese mixture, being careful not to deflate the whipped cream, until you have a light and fluffy cream layer.

                    Prepare the peach layer:

                      - In a medium saucepan over medium heat, combine the diced peaches, freshly squeezed lemon juice, granulated sugar, and cornstarch. Stir gently to incorporate the ingredients.

                        - Cook for approximately 5-7 minutes, stirring occasionally, until the peaches soften and the mixture thickens slightly. Remove from heat and allow it to cool for about 10 minutes.

                          Assemble the icebox squares:

                            - Remove the chilled graham cracker crust from the refrigerator and spread the cream layer evenly over the crust, ensuring it covers all edges.

                              - Spoon the peach mixture over the cream layer, spreading it out evenly.

                                - Cover the baking dish with plastic wrap and refrigerate for at least 4 hours or overnight, allowing the layers to set and meld together beautifully.

                                  Serve:

                                    - After the dessert has set, take it out of the refrigerator and cut it into squares for serving.

                                      - For an extra touch, garnish each square with additional whipped cream or a sprinkle of crushed graham crackers if desired.

                                        - Enjoy the refreshing and delightful Peach & Cream Icebox Squares!
