Ingredients

2 cups cooked chicken, shredded

1 cup BBQ sauce (choose your favorite brand)

4 flatbreads or naan bread

1 cup shredded mozzarella cheese

1/2 cup red onion, thinly sliced

1/2 cup corn kernels (can be fresh, frozen, or canned)

1/4 cup fresh cilantro, chopped (optional for garnish)

1/2 teaspoon smoked paprika

Olive oil, for brushing

Salt and pepper to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). If you have a pizza stone, place it in the oven while it heats, as this will help achieve a nice crisp texture on the flatbreads.

Prepare the Chicken: In a medium-sized mixing bowl, combine the shredded chicken with the BBQ sauce and the smoked paprika. Stir the mixture thoroughly to ensure the chicken is completely coated in the flavorful sauce. Taste and adjust seasoning with salt and pepper as needed.

Assemble the Flatbreads: On a baking sheet, lay out the flatbreads or naan bread. To enhance their crispiness during baking, gently brush both sides of each flatbread with olive oil.

Add the Toppings: Divide the BBQ chicken mixture evenly across the flatbreads, leaving a small border around the edges. Then, generously sprinkle the shredded mozzarella cheese on top, followed by an even distribution of corn kernels and the thinly sliced red onions.

Bake: Carefully transfer the baking sheet to the preheated oven (or place them on the heated pizza stone) and bake for 10-15 minutes. Keep an eye on them until the cheese is melted, bubbly, and the edges of the flatbreads turn a beautiful golden brown.

Garnish: Once done, remove the flatbreads from the oven and allow them to cool for a couple of minutes. For a fresh touch, sprinkle chopped cilantro over the top of each flatbread before serving.

Serve: Slice the flatbreads into wedges and serve them warm. These smoky pulled BBQ chicken flatbreads pair wonderfully with a side of coleslaw or a refreshing light salad for a complete meal experience.
