Ingredients

2 cups plain Greek yogurt

1 cup canned pure pumpkin (ensure it’s not pumpkin pie filling)

2 tablespoons maple syrup (adjust sweetness to your preference)

1 teaspoon vanilla extract

1 teaspoon pumpkin pie spice

1/4 teaspoon sea salt

1/2 cup granola (your choice: store-bought or homemade)

1/4 cup chopped pecans or walnuts (optional for added crunch)

Whipped cream for topping (optional indulgence)

Additional pumpkin pie spice for garnish (optional decorative touch)

Instructions

Prepare the Base: In a large mixing bowl, combine the plain Greek yogurt with canned pumpkin. Add the maple syrup, vanilla extract, pumpkin pie spice, and sea salt. Using a whisk, blend these ingredients together thoroughly until you achieve a smooth and creamy mixture.

Layer the Ingredients: Take serving cups or jars and begin to layer the pumpkin yogurt mixture. Start by adding approximately 1/4 cup of the pumpkin yogurt base to the bottom of each cup.

Add Granola: Over the yogurt layer, sprinkle about 2 tablespoons of granola in each cup, creating a delightful crunchy layer.

Repeat Layers: Continue the layering process by adding another 1/4 cup of the pumpkin yogurt on top of the granola. Follow this with an additional layer of granola. If you’re including nuts, feel free to sprinkle some chopped pecans or walnuts in during this layer for added flavor and texture.

Final Touch: To enhance the presentation, top each cup with a generous dollop of whipped cream, if desired. For a beautiful finishing touch, lightly dust the top with extra pumpkin pie spice.

Chill Overnight: Cover the cups with lids or plastic wrap, then place them in the refrigerator to chill overnight, or at least for 4-6 hours. This allows the flavors to meld and enhances the overall taste.

Serve: In the morning, give the cups a gentle stir to blend the layers if you prefer. Alternatively, enjoy each cup as is. Serve them cold for a refreshing breakfast or a satisfying snack!
