Ingredients

1 cup rolled oats

1/2 cup pure pumpkin puree

1/4 cup almond butter

1/4 cup honey or pure maple syrup

1/2 teaspoon pure vanilla extract

1 teaspoon pumpkin pie spice

1/4 teaspoon fine sea salt

1/4 cup dark chocolate chips (optional for a sweet twist)

1/4 cup chopped nuts (such as walnuts, pecans) or seeds (like sunflower seeds or pepitas)

Instructions

In a large mixing bowl, start by adding the rolled oats, pumpkin puree, and almond butter. Mix thoroughly until everything is evenly incorporated, creating a cohesive mixture.

Next, pour in the honey (or maple syrup), vanilla extract, pumpkin pie spice, and salt. Stir with a spatula or wooden spoon until all ingredients are well combined and the mixture is smooth.

If you choose to include them, gently fold in the dark chocolate chips and your chopped nuts or seeds. Ensure they are evenly distributed throughout the mixture for texture and flavor in every bite.

Cover the bowl with plastic wrap or a lid and refrigerate the mixture for about 30 minutes. This chilling time helps to firm it up, making it easier to shape into bites.

Once the mixture is chilled, use your hands to scoop small portions and roll them into balls roughly 1 inch in diameter. Place each bite on a parchment-lined baking sheet or tray.

For an extra layer of flavor and visual appeal, roll the energy bites in additional pumpkin pie spice or shredded coconut right after forming them.

Finally, store your delicious energy bites in an airtight container in the refrigerator for up to a week. For longer shelf life, consider freezing them in a sealed bag or container.
