2 large sweet potatoes, peeled and cubed

¼ cup milk (or dairy-free alternative)

2 tablespoons unsalted butter (or vegan substitute)

    Prepare the Salmon Marinade: In a small bowl, combine the olive oil, honey, Dijon mustard, minced garlic, salt and pepper, and chopped rosemary. Whisk the ingredients together until they are well-blended into a smooth marinade.

      Marinate the Salmon: Arrange the salmon fillets on a parchment-lined baking tray. Using a brush or spoon, generously coat each fillet with the marinade, ensuring each piece is fully covered. Allow the salmon to marinate for about 10 minutes while you prepare the sweet potatoes.

        Cook the Sweet Potatoes: In a large pot, add the cubed sweet potatoes and cover them with water. Bring the water to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and let the potatoes simmer for 15-20 minutes, or until they are easily pierced with a fork.
