1 lb ground beef (90% lean)

1 medium onion, diced

2 cloves garlic, minced

1 bell pepper (choose red or green), diced

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes with green chilies

1 can (8 oz) tomato sauce

2 tbsp chili powder

1 tsp ground cumin

1 tsp smoked paprika

½ tsp salt (to taste)

½ tsp black pepper (to taste)

¼ tsp cayenne pepper (optional, for added heat)

1 cup beef broth (or water)

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Shredded cheese (for serving)

Instructions
 

Sauté the Vegetables: Begin by heating the olive oil in a large pot over medium heat. Add the diced onion and bell pepper. Sauté these ingredients for approximately 3-4 minutes, or until the onion becomes translucent. Once softened, stir in the minced garlic and continue to cook for an additional minute until the garlic is fragrant and slightly golden.

    Brown the Beef: Next, push the sautéed vegetables to one side of the pot and add in the ground beef. Cook the beef, thoroughly breaking it up with a spatula, for about 5-7 minutes, or until it is browned and cooked through.

      Add the Spices: After browning the beef, sprinkle in the chili powder, ground cumin, smoked paprika, salt, black pepper, and cayenne pepper (if you enjoy a spicier chili). Stir these spices into the mixture and allow them to cook for about 1-2 minutes, allowing the spices to become fragrant and toasting them slightly.

        Combine Remaining Ingredients: Now, it's time to add the rest of your ingredients. Pour in the kidney beans, black beans, diced tomatoes (with their juices), tomato sauce, and beef broth. Stir everything together until well combined, then bring the entire mixture to a gentle simmer.

          Simmer the Chili: Once at a simmer, reduce the heat to low and cover the pot. Let the chili simmer for 20-25 minutes, stirring occasionally to prevent sticking. Taste and adjust the seasoning as necessary.
