1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) diced tomatoes with green chilies

1 medium onion, finely chopped

2 cloves garlic, minced

1 tablespoon chili powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

¼ teaspoon cayenne pepper (adjust based on heat preference)

1 cup beef broth

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

Fresh cilantro, chopped (for garnish)

Optional: Sour cream and shredded cheese for serving

Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the finely chopped onion. Sauté for approximately 3-4 minutes, stirring occasionally, until the onion turns translucent. Incorporate the minced garlic and continue to cook for an additional 30 seconds, stirring constantly until fragrant.

    Brown the Beef: Increase the heat to medium-high. Add the ground beef into the pot, breaking it apart with a wooden spoon. Cook for about 5-6 minutes until the beef is browned and fully cooked, ensuring no pink remains. If there's excess fat, drain it off before proceeding.

      Season the Mixture: Sprinkle the chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper over the beef and onions. Stir thoroughly to ensure the spices coat the meat evenly. Allow it to sauté for an extra 1-2 minutes to deepen the flavors.
