1 lb (450g) ground beef

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes (with juice)

1 medium onion, chopped

3 cloves garlic, minced

1 bell pepper (red or green), chopped

2 tbsp chili powder

1 tsp ground cumin

½ tsp smoked paprika

½ tsp salt

¼ tsp freshly ground black pepper

1 tbsp olive oil

1 cup beef broth (or water)

1 ripe avocado, diced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Sauté the Aromatics: In a large, heavy-bottomed pot, heat the olive oil over medium heat. Add the chopped onion and bell pepper. Sauté for about 5 minutes, stirring occasionally, until they start to soften and become translucent. Add the minced garlic and sauté for an additional minute until fragrant.

    Brown the Beef: Increase the heat to medium-high and add the ground beef to the pot. Use a wooden spoon to break up the meat as it cooks. Brown the beef for about 5-7 minutes, stirring occasionally, until it is no longer pink. If there’s excess fat, carefully drain it from the pot.

      Add the Beans and Tomatoes: Reduce the heat back to medium. Stir in the drained kidney beans, black beans, and diced tomatoes (with their juice). Pour in the beef broth, then add the chili powder, ground cumin, smoked paprika, salt, and black pepper. Mix everything together until well combined.

        Simmer the Chili: Raise the heat to bring the chili to a gentle boil. Once boiling, reduce the heat to low and cover the pot. Allow the chili to simmer for about 20-25 minutes, stirring occasionally to prevent it from sticking to the bottom. This will help meld the flavors together.
