Ingredients

1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups broccoli florets

1 bell pepper, sliced (choose red or yellow for vibrant color)

3 cloves garlic, minced

1-inch piece ginger, peeled and finely grated

3 tablespoons low-sodium soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

1 tablespoon vegetable oil (for cooking)

½ teaspoon sesame oil

Cooked rice for serving (about 4 cups), jasmine or basmati recommended

Salt and freshly ground black pepper to taste

Optional garnishes: sesame seeds and sliced green onions

Instructions

Marinate the Beef: In a medium mixing bowl, combine the thinly sliced beef with 1 tablespoon of soy sauce, cornstarch, and a pinch of salt and pepper. Toss to coat the beef evenly. Allow it to marinate for about 15 minutes while you prepare the other ingredients.

Blanch the Broccoli: Bring a pot of water to a rolling boil. Add the broccoli florets and blanch for approximately 2 minutes, or until they turn vibrant green and are slightly tender. Quickly transfer the broccoli to an ice bath to halt the cooking process. Drain and set aside.

Prepare the Stir-Fry Sauce: In a small bowl, whisk together the remaining 2 tablespoons of soy sauce, oyster sauce, and sesame oil. Set this mixture aside for later use.

Cook the Beef: Heat the vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the marinated beef slices in a single layer, searing them for 2-3 minutes until they develop a deep brown color. Avoid overcrowding the pan; if necessary, cook the beef in batches. Once cooked, remove the beef from the skillet and keep it warm on a plate.

Sauté the Aromatics: In the same skillet, add the minced garlic and grated ginger. Stir-fry these ingredients for about 30 seconds, or until they become fragrant and aromatic.

Add Vegetables: Return the cooked beef to the skillet along with the blanched broccoli and sliced bell pepper. Stir-fry all the ingredients together for about 3-4 minutes, allowing the vegetables to remain tender-crisp while still heating through.

Finish with Sauce: Pour the prepared stir-fry sauce over the beef and vegetables. Toss everything together until evenly coated in the sauce. Continue cooking for an additional minute to heat through. Taste and adjust the seasoning with salt and freshly ground black pepper if desired.

Serve: Spoon the sizzling stir-fry over a bed of warm cooked rice. For an elegant touch, garnish with a sprinkle of sesame seeds and sliced green onions.
