Quick Beef and Vegetable Stir-Fry

1 lb (450g) flank steak, thinly sliced against the grain

2 cups mixed bell peppers (red, yellow, and green), sliced into thin strips

1 cup broccoli florets

1 cup snap peas, trimmed of ends

3 cloves garlic, minced

1 tablespoon fresh ginger, minced

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil (for cooking)

Salt and black pepper, to taste

Cooked jasmine rice or noodles, for serving

Sesame seeds and chopped green onions, for garnish

Instructions
 

Prepare the Sauce: In a small mixing bowl, combine the soy sauce, oyster sauce, and sesame oil. Whisk together until well blended and set aside for later use.

    Marinate the Beef: In a medium bowl, add the thinly sliced flank steak and pour in half of the prepared sauce. Gently toss the steak to coat all pieces evenly. Allow it to marinate for at least 15 minutes at room temperature while you prepare the vegetables.

      Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Once hot, add the marinated beef in a single, even layer. Cook for about 2-3 minutes without stirring, allowing the beef to sear and get a nice brown color. After browning, remove the beef from the skillet and set it aside on a plate.

        Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Once heated, add the minced garlic and ginger, stirring for about 30 seconds until fragrant but not burnt. Next, add the sliced bell peppers, broccoli florets, and snap peas to the skillet. Stir-fry for 3-4 minutes, until the vegetables are vibrant and tender-crisp.

          Combine Ingredients: Return the cooked beef to the skillet with the vegetables. Pour in the remaining sauce and toss everything together. Stir-fry for an additional 2 minutes to heat through and ensure that all ingredients are well coated and flavors meld.

            Serve: Taste the stir-fry and season with salt and black pepper to suit your preference. Serve hot over a bed of jasmine rice or noodles. For an appealing finish, sprinkle with sesame seeds and garnish with freshly chopped green onions.
