1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and freshly ground black pepper, to taste

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

1 small onion, thinly sliced

4 large flour tortillas

1 cup fresh shredded lettuce

1 ripe avocado, sliced

1 cup salsa (store-bought or homemade)

1 cup shredded cheese (cheddar or Mexican blend)

Marinate the Chicken: In a medium mixing bowl, whisk together the olive oil, chili powder, ground cumin, smoked paprika, salt, and black pepper. Add the thinly sliced chicken breast and toss until all pieces are evenly coated with the marinade. Allow the chicken to marinate for about 10 minutes while you prepare the vegetables.

    Cook the Chicken: Heat a large non-stick skillet over medium-high heat. Once hot, add the marinated chicken to the skillet. Cook for 5-7 minutes, stirring occasionally, until the chicken is nicely browned and cooked through (internal temperature should reach 165°F).
