1 large head of cauliflower

1/4 cup extra virgin olive oil

2 tablespoons freshly squeezed lemon juice

Zest of 1 medium lemon

2 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and freshly cracked black pepper, to taste

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Preheat the Oven: Set your oven to 425°F (220°C). To make cleanup easier, line a large baking sheet with parchment paper.

    Prepare the Cauliflower: Carefully remove the green leaves from the cauliflower. Trim the stem so that the cauliflower can stand upright. Slice the cauliflower into 1-inch thick steaks—aim for 3-4 good-sized steaks from a large head. Reserve any remaining florets for another dish or roast them alongside the steaks.

      Make the Marinade: In a medium mixing bowl, combine the olive oil, lemon juice, lemon zest, minced garlic, dried oregano, dried thyme, smoked paprika, salt, and pepper. Whisk until all the ingredients are thoroughly blended.

        Marinate the Cauliflower: Arrange the cauliflower steaks on the prepared baking sheet. Generously brush both sides of each steak with the marinade, ensuring they are well coated. Allow the cauliflower to marinate for 15-20 minutes, which will deepen the flavors.

          Roast the Cauliflower: Place the marinated cauliflower in the preheated oven. Roast for 20-25 minutes, flipping the steaks halfway through to achieve an even golden brown. The steaks are ready when they are tender and have a nice golden crisp around the edges.

            Garnish and Serve: Carefully remove the cauliflower steaks from the oven. Let them cool for a couple of minutes before garnishing with freshly chopped parsley. Serve with lemon wedges on the side to add an extra burst of citrus flavor when desired.
