Ingredients

For the Salmon:

1 lb fresh salmon fillet

2 tablespoons olive oil

Salt and pepper to taste

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 tablespoon fresh lime juice

For the Pineapple Glaze:

1 cup fresh pineapple, diced

1/4 cup brown sugar

1/4 cup low-sodium soy sauce

1 tablespoon rice vinegar

1 teaspoon fresh ginger, finely minced

1 clove garlic, finely minced

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

For the Wraps:

8 large butter lettuce leaves

1/2 cup red bell pepper, thinly sliced

1/2 cup cucumber, julienned

1/4 cup red onion, thinly sliced

Fresh cilantro leaves for garnish

Lime wedges for serving

Instructions

Prepare the Salmon:

    - Begin by preheating your grill or a non-stick skillet over medium heat.

      - In a small mixing bowl, combine the olive oil, salt, pepper, garlic powder, smoked paprika, and lime juice. Mix well to create a marinade.

        - Use a brush to apply the marinade evenly over the salmon fillet.

          - Grill the salmon for approximately 5-6 minutes on each side, or until it easily flakes apart when tested with a fork. Once cooked, remove the salmon from heat and let it cool slightly on a plate.

            Make the Pineapple Glaze:

              - In a medium saucepan set over medium heat, combine the diced pineapple, brown sugar, soy sauce, rice vinegar, minced ginger, and minced garlic. Stir thoroughly to combine all ingredients.

                - Allow the mixture to reach a simmer and let it cook for about 5-7 minutes until the pineapple pieces are tender and the sauce has slightly thickened.

                  - Once the glaze has thickened, stir in the cornstarch-water mixture. Continue cooking for an additional 2 minutes while stirring, until the glaze becomes glossy and thick. Remove from heat and set aside to cool.

                    Assemble the Wraps:

                      - When the salmon is cool enough to handle, use a fork to flake it into bite-sized chunks.

                        - Take a butter lettuce leaf and place a generous scoop of the flaked salmon in the center.

                          - Add slices of red bell pepper, ribbons of cucumber, and thin slivers of red onion on top of the salmon.

                            - Drizzle the luscious pineapple glaze over the assembled ingredients. Finish with a sprinkle of fresh cilantro leaves for a burst of flavor.

                              Serve:

                                - Present the salmon lettuce wraps on a platter with lime wedges on the side for an added zing. These wraps make for a delightful and healthy meal or a refreshing appetizer. Enjoy every refreshing bite!
