1 lb (450g) fresh salmon fillet, skin removed and cut into 1-inch cubes

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and freshly cracked pepper, to taste

Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes before grilling)

For the Blueberry Salsa:

1 cup fresh blueberries, thoroughly rinsed and drained

1 small red onion, finely diced

1 small jalapeño pepper, seeds removed and finely diced (optional for additional heat)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 tablespoon honey or maple syrup for sweetness

Salt, to taste
