8 oz (225g) pasta (penne or rigatoni)

1 lb (450g) Italian sausage (sweet or spicy, casings removed)

1 red bell pepper, thinly sliced

1 yellow bell pepper, thinly sliced

1 medium onion, thinly sliced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (including juices)

1 cup low-sodium chicken broth

1 tsp dried oregano

1 tsp crushed red pepper flakes (adjust to taste)

2 tbsp olive oil

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Cook the Pasta: Bring a large pot of salted water to a rolling boil. Add your chosen pasta and cook according to the package instructions until al dente, usually around 8-10 minutes. Once cooked, drain the pasta, reserving a small cup of the pasta water for later, and set aside.

    Brown the Sausage: In a large skillet over medium heat, pour in the olive oil and allow it to heat up. Crumble the Italian sausage directly into the skillet.
